- 1 cup apple cider vinegar

- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- Optional substitution: You can swap apple cider vinegar for white vinegar if needed, but the cider vinegar adds a lovely depth of flavor.
- Optional substitution: Use less sugar if you prefer a tangier, less sweet candy.
Instructions
- Rinse the cranberries and pick through them to remove any stems or bruised berries. Set aside.
- In a large, heavy-bottomed saucepan, combine the sugar and apple cider vinegar. Stir over medium heat until the sugar dissolves completely — this usually takes about 5 minutes. This step always reminds me of those early mornings watching my grandmother prepare preserves, the gentle bubbling signaling the start of something wonderful.
- Add the cranberries to the pot, along with the sliced jalapeños, grated ginger, cinnamon, cloves, and salt.
- Bring the mixture to a boil, then reduce the heat to maintain a steady simmer. Let it cook uncovered, stirring occasionally, for about 20-25 minutes. You’ll notice the cranberries begin to burst and the mixture thickens. The kitchen will fill with a cozy, spicy-sweet aroma that always makes me smile.
- To test if the candy is ready, spoon a small amount onto a chilled plate and let it sit for a minute. If it wrinkles when pushed with your finger, it’s done. If not, keep cooking and testing every few minutes.
- Once ready, carefully ladle the hot cowboy candy into sterilized jars, leaving about 1/4 inch headspace. Seal with lids and let cool at room temperature.
