- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped

Instructions
- In a large bowl, combine the cottage cheese and chickpeas. Stir gently to mix.
- Add the diced cucumber, red bell pepper, and red onion to the bowl. Mix until the ingredients are evenly distributed.
- Sprinkle the chopped parsley on top, and pour in the lemon juice and olive oil. Toss everything together until well combined.
- Season with salt and pepper to taste. If you’re feeling adventurous, add the crumbled feta cheese for an extra layer of flavor.
- Let the salad sit for about 10 minutes before serving, allowing the flavors to meld together beautifully.
