- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups broccoli florets
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Red pepper flakes (optional, for a bit of heat)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Add the minced garlic and cook for another minute, stirring frequently.
- Stir in the broccoli florets and cook until they are bright green and just tender, about 3-4 minutes.
- Add the orzo to the skillet, stirring to coat it in the oil. Pour in the chicken broth and bring to a simmer. Cover and cook, stirring occasionally, until the orzo is tender and the liquid is absorbed, about 10 minutes.
- Return the chicken sausage to the skillet along with the Parmesan cheese and Italian seasoning. Stir well to combine and heat through.
- Season with salt, pepper, and red pepper flakes to taste. Serve immediately, garnished with additional Parmesan if desired.
