  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Red pepper flakes (optional, for a bit of heat)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add the diced onion and cook until translucent, about 3 minutes. Add the minced garlic and cook for another minute, stirring frequently.
  3. Stir in the broccoli florets and cook until they are bright green and just tender, about 3-4 minutes.
  4. Add the orzo to the skillet, stirring to coat it in the oil. Pour in the chicken broth and bring to a simmer. Cover and cook, stirring occasionally, until the orzo is tender and the liquid is absorbed, about 10 minutes.
  5. Return the chicken sausage to the skillet along with the Parmesan cheese and Italian seasoning. Stir well to combine and heat through.
  6. Season with salt, pepper, and red pepper flakes to taste. Serve immediately, garnished with additional Parmesan if desired.
