  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For those looking to switch things up, feel free to substitute the chicken with turkey or even make it vegetarian by using chickpeas. The mixed vegetables can also be adjusted based on what you have on hand—fresh or canned work just as well.

Instructions

  1. Preheat your oven to 400°F. Rinse and scrub the sweet potatoes thoroughly. Pierce each potato several times with a fork and place them on a baking sheet. Drizzle with olive oil and a pinch of salt.
  2. Bake the sweet potatoes for 45-60 minutes, or until tender. You’ll know they’re done when a fork can easily glide through.
  3. While the sweet potatoes are baking, melt the butter in a large saucepan over medium heat. Stir in the flour to create a roux, cooking for about a minute.
  4. Gradually whisk in the chicken broth and milk, allowing the mixture to thicken, about 3-5 minutes.
  5. Add the shredded chicken and frozen vegetables, stirring until everything is well combined. Season with thyme, garlic powder, salt, and pepper. Let simmer for 5 minutes to meld the flavors.
  6. Once the sweet potatoes are done, carefully slice them open and fluff the insides with a fork. Spoon generous amounts of chicken pot pie filling into each potato.
  7. Return the stuffed potatoes to the oven for an additional 10 minutes to let the flavors marry together.
