Ingredients
- 3 cups cooked chicken, shredded or diced (rotisserie chicken works great for a shortcut)
- 4 cups cauliflower rice (fresh or frozen, thawed and drained if frozen)
- 1 cup shredded cheddar cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 cup plain Greek yogurt (substitute with sour cream if preferred)
- 1/2 cup chicken broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots (or mixed vegetables of your choice)
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 tablespoons olive oil or butter
- Fresh parsley for garnish (optional)
If you’re short on time, don’t hesitate to swap homemade cauliflower rice with store-bought pre-riced cauliflower. Also, feel free to swap peas and carrots with whatever veggies your family loves—broccoli florets or mushrooms make excellent alternatives.
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil or butter in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.
- Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
- Stir in the cauliflower rice, frozen peas and carrots, dried thyme, smoked paprika, salt, and pepper. Cook for about 5 minutes, allowing the cauliflower to soften slightly and the flavors to meld.
- In a large bowl, combine the cooked chicken, sautéed vegetables, Greek yogurt, chicken broth, half of the shredded cheddar cheese, and Parmesan cheese. Mix everything until well incorporated.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining cheddar cheese evenly over the top.
- Bake uncovered for 25-30 minutes, or until the casserole is bubbly and the cheese is golden brown.
- Remove from the oven and let it rest for 5 minutes before serving.
- Garnish with fresh parsley if desired, then dig in!
