Learn how to make delicious Chicken Caesar Pasta Flatbread. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 large flatbread (approximately 1012 inches in diameter)
  • 1 cup cooked pasta (I prefer penne or rotini for texture)
  • 1 cup cooked chicken breast, shredded or diced (rotisserie chicken works great)
  • 1 cup romaine lettuce, chopped (or substitute baby spinach for a milder taste)
  • 1/2 cup Caesar dressing (store-bought or homemade—my grandma’s secret recipe is a must-try!)
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 tablespoon capers or anchovy fillets for authentic Caesar flavor
  • Optional garnish: freshly cracked black pepper and extra Parmesan

If you’re looking for a dairy-free option, you can swap out the cheeses for a plant-based alternative, and a light drizzle of lemon juice mixed with tahini can replace Caesar dressing nicely. I love these little swaps when I’m cooking for friends with different dietary needs.

Instructions

  1. Preheat your oven to 400°F (200°C). This ensures your flatbread will come out perfectly crisp.
  2. In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Brush the garlic-infused olive oil evenly over the flatbread, then place it on a baking sheet.
  4. Bake the flatbread for 5-7 minutes until just starting to crisp around the edges.
  5. While the flatbread bakes, toss the cooked pasta with the Caesar dressing, shredded chicken, and Parmesan cheese. Add salt and pepper to taste. This is the part where I like to sneak in a little extra Parmesan—my kids never complain!
  6. Remove the flatbread from the oven and spread the pasta and chicken mixture evenly over the top.
  7. Sprinkle the shredded mozzarella cheese over everything. This adds that lovely melty texture that makes the dish feel indulgent.
  8. Return the flatbread to the oven and bake for another 8-10 minutes, or until the cheese is bubbly and golden.
  9. Once out of the oven, top with fresh chopped romaine lettuce (or spinach) and a few more drizzles of Caesar dressing if you like it extra saucy.
  10. Garnish with freshly cracked black pepper and additional Parmesan, then slice and serve immediately.

One little tip I’ve learned from years of cooking for my family: don’t wait too long to add the lettuce after baking, or it will wilt. Adding it fresh keeps that crisp, refreshing contrast against the warm cheesy pasta. It’s these small touches that transform a simple recipe into a memorable meal.
