  • 1 package refrigerated pie crusts (or homemade if you’re feeling adventurous!)
  • 1 can (21 ounces) cherry pie filling
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 egg, beaten
  • 1 tablespoon milk

If you’re out of pie crust or looking to switch things up, a homemade crust can add that extra touch of love to your bites. You can also swap the cherry filling with apple or blueberry if that’s what you have on hand. It’s all about making it your own!

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Roll out the pie crusts on a lightly floured surface. Use a round cookie cutter to cut circles from the dough, about 3 inches in diameter.
  3. In a small bowl, mix together the sugar and cinnamon. Set aside.
  4. Spoon about a teaspoon of cherry pie filling onto each dough circle. Be careful not to overfill, as this can make sealing tricky.
  5. Fold the dough over the filling to create a half-moon shape, and press the edges with a fork to seal.
  6. In another small bowl, whisk together the egg and milk to create an egg wash. Brush this over each pie bite to give them a golden finish.
  7. Sprinkle the cinnamon-sugar mixture over the tops of the pie bites.
  8. Bake in the preheated oven for 12-15 minutes, or until golden brown. Let them cool slightly before serving, as the filling will be hot.
