- 8 slices of rustic bread (sourdough or ciabatta work wonderfully)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 pound mushrooms, thinly sliced (button or cremini are great options)
- 1 teaspoon thyme, fresh or dried
- Salt and pepper to taste
- 2 cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Brush each slice of bread with olive oil and arrange them on the prepared baking sheet.
- In a large skillet over medium heat, add the remaining olive oil and sauté the minced garlic until fragrant, about 1 minute.
- Add the sliced mushrooms to the skillet along with the thyme, salt, and pepper. Cook until the mushrooms are golden brown and tender, about 8-10 minutes.
- Spoon the mushroom mixture evenly over the prepared bread slices.
- Top each slice with a generous handful of shredded mozzarella and a sprinkle of Parmesan cheese.
- Bake in the preheated oven until the cheese is bubbly and golden, approximately 10-12 minutes.
- Garnish with freshly chopped parsley before serving, if desired.
