  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pound mushrooms, thinly sliced (button or cremini are great options)
  • 1 teaspoon thyme, fresh or dried
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Brush each slice of bread with olive oil and arrange them on the prepared baking sheet.
  3. In a large skillet over medium heat, add the remaining olive oil and sauté the minced garlic until fragrant, about 1 minute.
  4. Add the sliced mushrooms to the skillet along with the thyme, salt, and pepper. Cook until the mushrooms are golden brown and tender, about 8-10 minutes.
  5. Spoon the mushroom mixture evenly over the prepared bread slices.
  6. Top each slice with a generous handful of shredded mozzarella and a sprinkle of Parmesan cheese.
  7. Bake in the preheated oven until the cheese is bubbly and golden, approximately 10-12 minutes.
  8. Garnish with freshly chopped parsley before serving, if desired.
