Ingredients
Scale
- 1 pound ground beef (you can use lean or regular, depending on preference)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese (feel free to mix sharp and mild for depth)
- 1 can (16 oz) refrigerated biscuit dough (or homemade biscuit dough if you’re feeling ambitious!)
- 1/2 cup sour cream (for creaminess; Greek yogurt is a good substitute)
- 1/2 cup beef broth or water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika (adds a subtle warmth; regular paprika works too)
- 1/2 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 2 tablespoons olive oil or butter
- Optional: 1 cup frozen peas or corn for a pop of color and sweetness
Instructions
- Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish. This is a great moment to remind yourself to savor the process—a little grease here means golden biscuits later!
- In a large skillet, heat olive oil or butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. I like to let the onions get translucent and just a little sweet—it’s the secret to a rich flavor base.
- Add the minced garlic and cook for another 30 seconds until fragrant. Garlic is one of those ingredients that instantly makes a dish feel like home.
- Add the ground beef to the skillet. Break it apart with a wooden spoon and cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary—leaner ground beef helps keep this lighter, but a bit of fat adds flavor.
- Stir in Worcestershire sauce, smoked paprika, salt, and pepper. If you’re using frozen peas or corn, fold them in now. Let the mixture simmer for 2 minutes to meld the flavors.
- Remove the skillet from heat and stir in the sour cream and half of the shredded cheddar cheese. This step is where that creamy, cheesy goodness really starts to shine. The sour cream adds a tangy richness that balances the beef.
- Pour the beef mixture into your prepared baking dish, spreading it evenly.
- Open the biscuit dough and arrange biscuits on top of the beef mixture, spacing them slightly apart. This was always my kids’ favorite part—they love popping the biscuits onto the dish and watching them puff up in the oven.
- Sprinkle the remaining cheddar cheese over the biscuits. Because, honestly, there’s never too much cheese.
- Bake in the preheated oven for 20-25 minutes, or until biscuits are golden brown and cooked through. The cheese will be bubbly and slightly browned—that’s your cue that dinner is ready.
- Let the bake cool for 5 minutes before serving. This little pause helps everything set and makes it easier to dish out generous portions.
