Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup salsa
- 1 1/2 cups shredded cheddar cheese
- 8 large flour tortillas
- 1 package frozen fries
- Optional toppings: sour cream, guacamole, chopped cilantro
Feel free to swap in ground turkey or chicken for a lighter version, or add some black beans for extra protein. The beauty of this dish is its adaptability to whatever you have on hand.
Instructions
- Preheat your oven to 400°F. Spread the frozen fries on a baking sheet in a single layer and bake according to package instructions.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Add ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon, about 7-10 minutes.
- Stir in cumin, chili powder, salt, and pepper, and cook for an additional 2 minutes to let the spices bloom.
- Mix in the salsa and let the mixture simmer for 5 minutes to meld the flavors.
- Warm the flour tortillas in a dry pan or microwave to make them pliable.
- Place a portion of the beef mixture on each tortilla, sprinkle with cheddar cheese, and roll up tightly.
- Once the fries are crispy and golden, remove them from the oven and serve alongside the burritos.
A little tip: Warming the tortillas beforehand makes rolling much easier and prevents them from cracking. This was a trick I learned from my grandmother, who always knew the little things that made a big difference.
