Instructions
- Preheat your oven to 350°F. Line a 9×13-inch baking pan with parchment paper, ensuring some overhang for easy removal.
- In a medium bowl, combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
- Press the crumb mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then let cool slightly.
- While the crust is baking, beat the cream cheese and remaining 1/4 cup sugar in a large bowl until smooth and creamy, about 2-3 minutes.
- Add the sour cream, eggs, and vanilla extract to the cream cheese mixture, and beat until fully combined.
- Pour the cheesecake mixture over the cooled crust, spreading it evenly with a spatula.
- In a separate bowl, toss the diced apples with cinnamon and brown sugar until well coated.
- Evenly distribute the apple mixture over the cheesecake layer.
- Bake for 30-35 minutes, or until the cheesecake is set and the apples are tender.
- Allow the bars to cool to room temperature, then refrigerate for at least 2 hours to fully set.
- Before serving, drizzle with caramel sauce. Cut into squares and enjoy!
