  • 1 tablespoon Cajun seasoning (store-bought or homemade blend of paprika, cayenne, garlic powder, onion powder, thyme, and oregano)
  • 1/2 teaspoon smoked paprika (optional, but it adds beautiful depth)

  • 1/4 cup chopped fresh parsley or green onions for garnish

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. When the oil shimmers, add the chopped onion and diced red bell pepper. Sauté for about 4-5 minutes until they soften and the edges start to caramelize. This step always reminds me of how my grandmother taught me that soft, sweet onions form the flavor foundation for so many dishes.
  2. Add the minced garlic and cook for another 30 seconds, just until fragrant. Be careful not to burn it—garlic can go from perfect to bitter in seconds.
  3. Push the vegetables to the side of the skillet and add the ground turkey in the cleared space.   6. After 20 minutes, remove the skillet from heat and let it stand, covered, for another 5 minutes. This resting period lets the rice finish cooking and absorb all those wonderful spices.
  7. Fluff the rice with a fork, taste, and adjust seasoning if needed. Sprinkle with fresh parsley or green onions before serving for a fresh burst of color and flavor.
