If you’re ever out of an ingredient, don’t worry. You can easily substitute granulated sugar for brown sugar if needed, and if you’re a fan of other spices, a pinch of nutmeg can add a lovely depth to these cookies.

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes. This step is key for that perfect cookie texture.
  4. Beat in the egg, vanilla extract, and cinnamon until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix, as this can make the cookies tough.
