Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon milk (for glaze)
- 1/2 teaspoon cinnamon (for glaze)
If you’re ever out of an ingredient, don’t worry. You can easily substitute granulated sugar for brown sugar if needed, and if you’re a fan of other spices, a pinch of nutmeg can add a lovely depth to these cookies.
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes. This step is key for that perfect cookie texture.
- Beat in the egg, vanilla extract, and cinnamon until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix, as this can make the cookies tough.
- Using a tablespoon, scoop the dough and place it onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 10-12 minutes, or until the edges are golden brown. Remember, the cookies will continue to cook on the baking sheet after being removed from the oven.
- While the cookies are cooling, mix the powdered sugar, milk, and cinnamon in a small bowl to create the glaze.
- Once the cookies have cooled slightly, drizzle the glaze over the tops for a sweet finish.
These cookies are truly a labor of love, and I promise you, they’re worth every step. The smell alone will have your family coming to see what’s cooking!
