Instructions
- Begin by browning the butter. In a medium saucepan over medium heat, melt the butter. Stir constantly until it turns golden brown and smells nutty, about 5-7 minutes. Remove from heat and let cool slightly.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
- In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, egg, and vanilla extract. Pour the cooled brown butter into the mixture and whisk until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- Chill the dough in the refrigerator for at least 30 minutes. This step is crucial for preventing the cookies from spreading too much while baking.
