  • 1 packet of Biscoff cookies (approximately 250g)
  • 3 ripe bananas, sliced
  • 1 cup of heavy whipping cream
  • 1/2 cup of granulated sugar
  • 2 cups of milk
  • 1 tablespoon of cornstarch
  • 1 teaspoon of vanilla extract
  • 1/2 cup of caramel sauce (store-bought or homemade)
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the milk, sugar, cornstarch, and a pinch of salt. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5–7 minutes.
  2. Remove the saucepan from the heat and stir in the vanilla extract. Allow the mixture to cool slightly.
  3. In a trifle dish or individual serving cups, begin by layering the Biscoff cookies, followed by a layer of sliced bananas.
  4. Pour a layer of the pudding mixture over the bananas, smoothing it with the back of a spoon. Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.
  5. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold in the caramel sauce, creating swirls of caramel through the cream.
  6. Top the pudding layers with the caramel cream, spreading it evenly over the top.
  7. Chill the dessert in the refrigerator for at least 2 hours before serving to allow the flavors to meld together beautifully.
