- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 2 large eggs
- 1 cup panko breadcrumbs

- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- 1/2 teaspoon garlic powder
- 2 cups cooked jasmine rice
- 1 cup shredded cabbage or coleslaw mix
- 2 green onions, sliced

Instructions
- Preheat your oven to 400°F. Prepare a baking sheet by lining it with parchment paper.
- Set up a breading station with three shallow bowls: flour in the first, beaten eggs in the second, and panko breadcrumbs in the third.
- Lightly season the chicken pieces with salt and pepper. Coat each piece in flour, then dip in eggs, and finally coat with panko breadcrumbs. Arrange on the prepared baking sheet.
- Bake the chicken for 20-25 minutes or until golden brown and cooked through, flipping halfway through for even crispiness.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, soy sauce, and garlic powder to make the creamy sauce.
- To assemble the bowls, start with a base of cooked jasmine rice. Add a layer of cabbage or coleslaw mix. Top with crispy chicken pieces.
