- Place the cauliflower on a cutting board and, using a sharp knife, slice it into ¾-inch thick “steaks.” You should get about 3-4 steaks from one head, with some loose florets left over.
- Arrange the cauliflower steaks and any loose florets on the prepared baking sheet in a single layer.
- In a small bowl, mix together the olive oil, garlic powder, smoked paprika, salt, and black pepper.
- Brush both sides of each cauliflower steak generously with the seasoned olive oil mixture. Don’t be shy—this is where the flavor really comes alive.
- Bake in the preheated oven for 20 minutes, then carefully flip each steak and bake for another 15 minutes. You’re looking for golden brown edges and a tender center when pierced with a fork.
- During the last 5 minutes of baking, sprinkle the Parmesan cheese over the steaks if using, allowing it to melt and form a beautiful crust.
- Remove from the oven and squeeze fresh lemon juice over the steaks. Garnish with chopped parsley before serving.
