- 3 cups mashed potatoes (preferably homemade or leftover, cooled)
- 1 cup sharp cheddar cheese, shredded
- 6 slices bacon, cooked crisp and crumbled
- 2 large eggs
- 1/4 cup sour cream (for creaminess and tang)
- 1/4 cup green onions, finely chopped (optional for a fresh kick)
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (adds a subtle smoky depth)
- Salt and pepper to taste
- Butter or non-stick spray for greasing the muffin tin
If you want to make this recipe a bit lighter, Greek yogurt can be swapped in place of sour cream without losing any creaminess. For a vegetarian twist, omit the bacon and add sautéed mushrooms or caramelized onions instead. I’ve also substituted sharp cheddar with gouda or mozzarella when I was out of cheddar, and it turned out just as delicious.
Instructions
- Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with butter or non-stick spray to ensure easy removal later.
- In a large bowl, combine the mashed potatoes, shredded cheddar cheese, crumbled bacon, eggs, sour cream, green onions, garlic powder, smoked paprika, salt, and pepper. Mix well until everything is evenly incorporated. If the mixture feels too soft, refrigerate for 15 minutes to help it firm up slightly for easier handling.
- Divide the mixture evenly among the muffin cups, pressing the potato mixture up the sides to form little cups with a hollow center. This is where the magic happens—you’ll get a crispy edge and a creamy, cheesy middle.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the centers are set. Keep an eye on them after 20 minutes to avoid over-browning.
- Remove from the oven and let them cool in the pan for about 5 minutes before carefully running a butter knife around the edges to loosen and gently removing each cup.
- Serve warm, ideally with a sprinkle of extra green onions or a dollop of sour cream on top.
