Ingredients
- 1 package (8 oz) crescent roll dough (usually 8 triangles)
- 8 oz wheel of brie cheese (whole wheel, rind on)
- 6 slices of bacon, cooked until crispy and chopped
- 2 tablespoons maple syrup (optional, but adds a lovely sweetness)
- 1/4 cup chopped fresh rosemary or thyme (fresh herbs add a wonderful aroma)
- 1 small garlic clove, minced (for a subtle savory kick)
- 1 egg, beaten (for egg wash to give a golden finish)
- Fresh cracked black pepper, to taste
Substitution tips: If you don’t have fresh rosemary, dried herbs work just fine—just use about a teaspoon. You can swap maple syrup with honey or skip it entirely if you prefer a less sweet bite. Turkey bacon is a great leaner alternative, and if you’re avoiding pork, smoked salmon or sun-dried tomatoes can bring a different but equally delicious flavor.
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup a breeze.
- Unroll the crescent dough and separate it into triangles. Leave the triangles connected at the base so they form a circle when arranged.
- Place the whole wheel of brie in the center of the dough on the baking sheet.
- Sprinkle the cooked, chopped bacon evenly over the top of the brie.
- In a small bowl, mix the maple syrup (if using), minced garlic, and chopped fresh herbs. Drizzle this mixture over the bacon and brie.
- Starting at the wide end of each crescent triangle, fold the dough over the edge of the brie and bacon, tucking and pinching the dough underneath to form a wreath shape. The points of the triangles should overlap slightly to enclose the filling.
- Brush the entire wreath with the beaten egg to give it a beautiful golden color once baked.
- Sprinkle freshly cracked black pepper over the top for an extra layer of flavor.
- Bake in the preheated oven for 20-25 minutes, or until the crescent dough is puffed and golden brown.
- Remove from the oven and let it cool for 5 minutes before serving. This rest time lets the melted brie settle so you don’t lose any of that ooey-gooey goodness.
I’ve found that giving the wreath a little time to cool is key—especially when serving to kids or a crowd. It’s tempting to dive right in, but patience means everyone gets that perfect melty texture without any burns!
