Instructions
- Start by toasting your bread lightly in a toaster or on a skillet for about 2-3 minutes, just until it’s slightly golden. This helps create a barrier that prevents sogginess from the tomatoes.
- While the bread is toasting, mash the avocado in a small bowl. Add a pinch of salt and pepper to taste. I love to make this part colorful by adding a squeeze of lemon juice to keep it fresh and vibrant, just like those sunny afternoons with my grandmother.
- Once the bread is toasted, spread a generous layer of the mashed avocado on two slices. Go ahead and pile on the tomato slices next. If you’re feeling adventurous, throw in some fresh basil leaves for a burst of flavor!
