Learn how to make delicious Authentic Jamaican Curry Chicken. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Gathering the right ingredients is like preparing for a family gathering—every piece has its role in the harmony of flavors.

  • 2 pounds chicken thighs, bone-in and skinless
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon allspice
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 scotch bonnet pepper, seeded and chopped
  • 2 cups chicken broth
  • 1 medium potato, peeled and diced
  • 1 carrot, sliced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 lime, juiced
  • Fresh thyme sprigs, for garnish

If you’re out of scotch bonnet peppers, a habanero can work as a substitute, though it won’t have the same fruity undertone. Remember, the key is to make the dish your own, just like I learned from my grandmother.

Instructions

Cooking is like telling a story—each step builds on the last, leading to a delicious climax.

  1. In a large bowl, combine the chicken, curry powder, allspice, salt, and pepper. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes for the flavors to meld.
  2. Heat the vegetable oil in a large pot over medium heat. Add the marinated chicken pieces and brown on all sides, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same pot, add the onion, garlic, ginger, and scotch bonnet pepper. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
  4. Return the chicken to the pot. Add the chicken broth, potato, and carrot. Stir to combine and bring to a simmer.
  5. Cover the pot and let the curry cook on low heat for about 30-35 minutes, or until the chicken is tender and the potatoes are cooked through.
  6. Before serving, stir in the lime juice and adjust seasoning if necessary. Garnish with fresh thyme sprigs for a burst of freshness.
