Substitution tip: If you don’t have chicken breasts, boneless thighs work beautifully and add a bit more richness. For apples, Honeycrisp or Fuji are great alternatives that offer a sweeter note if you prefer less tartness.

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes. This step always reminds me of my grandma’s kitchen—the smell of onions cooking was like a warm hug.
